let’s get creative

Basically, this was an effort to use the produce in my fridge that was about to go bad. I’m not sure what to call this other than just “an experiment”, but here goes:

Ingredients:

  • Sweet potato*
  • A pink lady apple**
  • A carrot
  • Close to half a bag of baby spinach
  • A clove of garlic
  • Vegetable oil
  • Spices:
    Paprika
    Thyme
    Salt
    Pepper
    Coriander

*I used a small bag of pre cut sweet potato cubes, but wouldn’t recommend it…it’s hard to tell freshness very well, and in retrospect, I shouldn’t have used them

**The variety of apple matters, because some are too soft and will cook down and get mushy immediately

Directions, kind of:

  1. Heat the vegetable oil in the pan, add carrots and sweet potato first, then the apple slightly after (I added the sweet potato last this time because they were soft/ worse quality than you should actually cook with)
    You should either cook these for longer than you think you need to, or pre-bake your carrots and sweet potato
  2. Add spices throughout the cooking time, and make sure you get them on all the ingredients  (I know, I know, this is really vague)
  3. Add spinach last

Mine wasn’t that stellar because my sweet potatoes weren’t good, but the way the tartness of the apples worked with everything else was pretty nice. I would say to just use better sweet potato– cut a fresh one yourself, or use frozen so the flavor stays locked in and the texture is firm enough.

The apple was the highlight no question– if anything, just put a few of those in a pan and have fruit for dinner 🙂 .
